Air France Brings Michelin Cuisine to Flights from Canada

Canadian business class travellers will enjoy an extra-special culinary perk, starting today, on all Air France flights departing from Canada. Michelin-starred chef Daniel Boulud is partnering with the airline to create new dishes to be served in the business class cabin on all Air France flights from Montreal, Toronto and Vancouver.
To elevate the concept of fine French dining in the sky, Air France asked the famous French chef, who created Café Boulud at the Four Seasons Hotel in Toronto and Maison Boulud at the Ritz-Carlton Montreal, to create new offerings every month. Inspired by French culinary traditions, Boulud is introducing a menu accented by the flavours of the Mediterranean, Basque Country and even Japan.
A few of the new menu offerings include:
• Salmon with Fennel, Chickpea and Sumac;
• Braised Chicken Basquaise with Chorizo, Peppers and Saffron Rice;
• Braised Lamb with Spring Root Vegetables.
Boulud, who was born in Lyon and now makes his home in New York City, is considered one of the leading chefs in the United States. In total, he oversees 16 restaurants.
Air France, which is committed to promoting French haute cuisine in all cabin classes, has worked with featured chefs since 2009 to prepare special menus for business class passengers. Among the Air France alumni are such noted culinarians as Joël Robuchon, Guy Martin, Michel Roth, Thibaut Ruggeri, Régis Marcon, Anne-Sophie Pic and François Adamski.
